Mexican Fusion Night at Bistro St. Michaels
Join us on Tuesday, April 8th for an unforgettable evening celebrating the final Fusion Night of the off-season, before we return on November 11th with Ramen Fusion Night!
This exclusive menu, carefully curated by our own Chef Elmer, draws inspiration from his mother’s hometown of Hidalgo, Mexico—offering a taste of rich culinary heritage and innovative flavors.
To Start:
Agua Chile – Shrimp & Rockfish marinated in Chile & Lime, paired with a Crispy al Pastor Cauliflower Tostada.
(Al Pastor – smoky, sweet-marinated meats slow-cooked on a vertical rotisserie. Agua Chile – a spicy green broth version of ceviche that infuses the dish with bold flavors.)
Main Event:
Pollo Ximbo – Marinated chicken braised in banana leaves, served with a rich, complex molé sauce and nopales.
(Ximbo – a traditional pit-barbecue dish from Hidalgo. Molé – a sauce composed of over 20 ingredients, including chocolate, creating a harmonious depth of flavor.)
To Finish:
House-Made Prickly Pear Sorbet – a refreshing, tangy end to a delightful evening.
