We are in our 12th year of distilling spirits in Saint Michaels, and our tasting room showcases an incredibly unique selection of American rums.
Every drop is distilled by hand, in small batches, from start to finish. Visit us every day for complimentary tastings in our lovely spirit shop: Mon-Sat 11-5pm & Sundays 11-4pm
Our distillery is located in the heart of Saint Michaels, in the historic Old Mill, just off Talbot Street, behind the brewery + the winery, across from the Classic Motor Museum and next to the Port of Call cigar shop.

LYON RUM is the flagship spirit of Windon Distilling Company, located in Saint Michaels, Maryland. Founded in 2012, and proud to be the oldest & original craft distillery in the state, distillery launched with a signature line of rums paying tribute to the rich, spirited traditions of the Eastern Shore. LYON RUM starts with intentionally-sourced raw ingredients: 100% Louisiana cane sugar & molasses, and is truly hand-crafted; every drop is fermented and double-distilled on site in small pot stills, resulting in a wonderfully unique final product. The goal is to create a distinct & expressive American spirit – working to define the category of New American Rum, while experimenting with inspired infusions & finishes.Highlights
